Interesting news article which hints a possible entry by Pepsi into Indian bakery market by launching salty biscuits in snacks category .Already Pepsi has Uncle chips, Lays , Kurkure a Lehar namkeen and Cheetos into its product basket . It make sense for Pepsi to enter into Rs 6000/- Crores biscuit market as it has deep distribution channels and already its snack s are popular among masses .
At present Parle's Krackjack , Monaco and Britannia's 50-50, Chaska Maska rules the salty biscuit market .

Fonterra s JV with Britannia has come to an end as Fonterra has agreed to sell it stakes to Britannia Industry ie Its dairy division Britannias New Zealand Foods ( BNZF) .It had 49% stake in the joint venture . Danone exits Britannia


The major news this week has been an agreement reached out between two warring groups , one french conglomerate Danone and other India s bakery major Britannia . Danone has agreed to sale its stake of 25.48% to Wadia group which has approx the same % of stake .This would result into total takeover of Britannia by Wadia Group and would be the majority stake holder .
Danone and wadias has overthrown Mr Rajan Pillai to take over the realm of this biscuit major .Danone and Britannia has been loggerheads for last three years mainly on the issue of brand ""Tiger "' bieng marketed by Danone in other markets without Britannias approval .Danone wanted to enter Indian market of Diary and Mineral water projects which wadias refused to give no objection certificates to Danone which is mandatory for any foreign country which already have jvs .
Danone through this JV did tried few products but were not successful such as SWISS ROLLS ,PRINCE CREAM BISCUITS .
Danone already has sold its biscuit business to Kraft Foods with brands like LU ,PRINCE CREAM
By selling their stakes Danone would be free to launch its Diary and Mineral water products few of famous products which Danone has are Aqua , Evian,Activia,Actimel etc

What is zero trans fat

Fat is major Ingredient of any bakery product after flour and sugar . Fat is considered to result any many diseases and main factor for obesity.
Bakery product manufacturer has started labeling as zero trans fat product . This is due to heighten consumer awareness and other international brands like Mcvities and other declaring there product as zero trans fat .Any serving have less than 0.5grams of trans fat and it doesn't mean that it has zero fat .
Trans fat (also known as trans fatty acids) is formed when liquid vegetable oils go through the chemical process of hydrogenation to make the oils more solid. This gives food a longer shelf-life and can improve taste, shape and texture. Some trans fat also is found naturally in small amounts in certain meat and dairy products.

Partial hydrogenation, the process used to increase shelf-life of polyunsaturated fatty acids (PUFAs) / vegetable oils creates trans fatty acids. Many studies have demonstrated that trans fatty acids increase the clot forming tendency much more than saturated fats, by not only increasing LDL cholesterol to similar levels but also by decreasing the high density lipoprotein (HDL) cholesterol, (which is the good cholesterol). Several studies have found that intake of non natural trans fatty acids increases the risk of coronary heart disease Most trans fatty acids are contributed by industrially hardened oils. Even though trans fatty acids have been reduced or eliminated from retail fats and spreads in many parts of the world, generally available deep-fried foods and baked goods are a major and increasing source.
These are then substituted by Palm oil , Palmolien , Fully hydrogenated vegetable oil


Outsourcing manufacturing in Bakery Industry

Maximum number of Bakery product manufacturers are outsourcing their manufacturing activity .It make sense also with overhead cost spiralling up outsourcing becomes the most obvious route . The Big 3 ( PARLE , BRITANNIA , ITC ) all have outsourced their most of manufacturing to contract manufacturers . Contract manufacturers are paid for conversion of raw material into finished product . Contract manufacturers liabilities are labour , legal , land ,maintenance ,utilities and other local laws .This allows these Major players to focus on marketing , brand development , R&D activities . Contract Manufacturers also have business to run OR to run plants full time and can build own brand . This is also termed as Third party manufacturing or private label .
This helped number of factory owners to generate business , give employment to large number of people .
This concepts has also caught attention of entrepreneurs who outsources bakery product with
there own recipes , brand and packaging . Entrepreneurs or businessmen from developed economies outsource products from low cost countries label it and then sell them in their own market .In process make good profit .
For countries where bakery manufacturing is not so much developed ,people outsource these products from manufacturers ,these could be classic example of trading .

Waste Heat recovery from biscuit oven stacks

Biscuit manufacturing involves high temperatures for baking .Various type of ovens are available for baking bakery products . Heat recovery can be done for biscuit oven which has 5 - 6 zones basically in indirect Oven .As temperatures are very high ( 400-500degc) on  feed end these stacks are then joined to a common duct which collects heat from these stacks with help of blower and then these flue gases is passed onto the last zone which requires low temperature . This temperature is as low as 180- 200 deg c can be attained by circulating flue gases collected in common duct from these stacks .This eliminates need of one burner all together at coloring zone or last zone .

Fuel is saved by implementing this kind of arrangement . 15 ltrs-20ltrs /hr can be saved
