Kelloggs Cookies Plant Gets FDA Warning

 In recent  spate  of   food safety related issues  FDA  of  United States  have warned  major bakery manufacturer Kellogg's  for violation for hygiene and cleanliness around  production areas which may cause food borne disease such as growth of   Listeria monocytogene

Federal officials sent a warning letter to Kellogg's after inspectors found bacterial contamination in the company's Augusta, Ga., cookie bakery.

In a letter sent last week to plant manager Keith Downing from the FDA's Atlanta district office, District Director John Gridley said inspectors found Listeria monocytogenes in samples taken throughout the plant and "significant violations" of Current Good Manufacturing Practice regulations for food manufacturers.

Based on the inspection, "we have determined that the foods manufactured at your facility are adulterated" within the context of the Food, Drug and Cosmetic Act "in that they have been prepared, packed, or held under insanitary conditions whereby they may have become contaminated with filth, or whereby they may have been rendered injurious to health."

The agency said in the letter, released Tuesday, inspectors found samples positive for Listeria monocytogenes that seemed genetically identical to a strain found at the plant during an inspection in 2010.

"The presence of a persistent strain of L. monocytogenes in your facility between January 2010 and February 2011 is significant in that it demonstrates that your cleaning and sanitation efforts were inadequate to remove this organism," the warning letter read.

E.coli Fear Grips Europe

Death toll  in Germany  due  to  consumption of  food infected by  E.coli has risen  to 31 .  In one of the deadliest food borne related  contamination  E.coli   strains  have been reported from  14 other European countries . This episode highlights the importance of  food safety  checks  into entire  supply chain right from farm  to  restaurants and manufacturing units .  Mostly  raw foods do not have labels  and  farmers are not equipped with  the test required to detect these microbes .  Germans Authorities  initially  suspected  cucumber s for  the infection but  with reports confirming the origin to be bean sprouts   ,the ban orders on  tomatoes , cucumber and lettuce has been withdrawn.

As the death toll in Germany pushed to 31, the county's national disease-control center Friday said a new case-control study indicates that locally grown sprouts from an organic farm in Lower Saxony touched off the massive E. coli outbreak that has sickened nearly 3,000.

Speaking at a news conference Friday, Robert Koch Institute (RKI) president Reinhard Burger said, "It is the sprouts."

Burger said samples collected from the sprouts farm have not tested positive for the outbreak strain of E. coli O104:H4, but new interviews with case patients and controls point to the consumption of sprouts as the cause of the epidemic. He said that people who reported eating the suspect sprouts were nearly nine times more likely to have developed bloody diarrhea than those who said they did not eat them.

But there also may be direct evidence implicating the sprout farm.


Chorleywood Process Which Revolutionised Bread Manufacturing

Bread Manufacturing was  changed for ever  with  Chorleywood  process  , This process allowed bakers to produce bread loaves in  shortest  ever  time with continuous process without  the  conventional method of  allowing bread to ferment for long hours . Most of automated Bread Manufacturing plants  across the globe  follow Chorleywood process .

Even the fresh crusty bread baked at your local supermarket is probably made the Chorleywood way.

The work of the scientists at the Chorleywood Flour Milling and Bakery Research Association laboratories in 1961 led to a new way of producing bread, making the average loaf in Britain 40% softer, reducing its cost and more than doubling its life.

What is more, each slice was uniform.

For its supporters, it was the innovation that pushed bread into the modern era.

"It is a process we invented and we should be very proud of it," says Gordon Polson, of the British Federation of Bakers. "UK bread is around the cheapest in the world."

The bread scientist, Stan Cauvain, who worked with the original inventors and has written the definitive work on the Chorleywood Process says they knew from the beginning they had changed baking forever.

"The inventors knew they were on to something special and it would have far reaching consequences."

Its origins lay in the late 1950s and the need to try to find a way for small bakers to compete with new industrial bakeries. The light brown "national loaf" during the long years of rationing had, for many consumers, outstayed its welcome. Soft, springy, white bread - that did not go stale quickly - was what the public wanted.

"Already, thanks to the Chorleywood process, nearly half the wheat in our bread is British. The industry's current development programme could bring about a situation where British bread is made from an even higher proportion of British wheat - thus making the British loaf even better value for money in relation to world bread prices."

The research bakers at Chorleywood discovered that by adding hard fats, extra yeast and a number of chemicals and then mixing at high speed you got a dough that was ready to bake in a fraction of the time it normally took.

It allowed bread to be made easily and economically with low protein British wheat.

Parle Products Goes For Expansion Mode To Thwart Competition

 Parle  Products  the leading  biscuit manufacturer  in India  has adopted  a aggressive  expansion plan  to maintain its leadership position in biscuit segment through increasing its production  capacities and distribution channels .

The Rs6,000 crore biscuits major Parle Products, which has pilfered Britannia Industries Ltd’s market share, is looking to maintain its leadership in the branded biscuits segment.
Parle claims to hold a market share of 40% in volume and 32% in value terms in the branded biscuits segment. At present, Britannia has a market share of 28% in volume terms and 32% in value.

Analysts estimate Britannia has lost about 4% volume share in the last three years, whereas Parle has gained the same.
Going forward, the company plans to double its distribution network and increase the number of its manufacturing units.

Portugese Dan Cake Enters India Through JV With Phadnis Group

Another International  Bakery  major  enters  Indian bakery market . Dan Cake  from Portugal  plans  to start up bakery manufacturing unit  in Maharashtra
Dan Cake, Portugal, one of the leaders in bakery and confectionery industry, is all set to enter Indian market through a JV with Pune based Phadnis Group. This was announced by Kantilal Jamnadas, chairman of the board, Dan Cake, Portugal at a press conference in Pune. An agreement to this effect has been signed between Dan Cake, Portugal and Phadnis Industries Limited, to form 'Danesita Phadnis Food Industries Limited', a 66:34 joint venture.

Pune based Phadnis Group is engaged in businesses like real estate, infrastructure, hospitality and IT.
"We would be making our Danesita brand stronger in the Indian market. Danesita is already popular in many European countries for its range of products including cookies, butter cookies, biscuits, Swiss rolls, family cakes to name a few," said Jamnadas.
