Wheat Bran – A Valuable Ingredient for High-Fiber Biscuits and Breakfast Cereals

Wheat Bran

Wheat bran is one of the most valuable by-products of the wheat milling industry and is widely used as a functional ingredient in the bakery and breakfast cereal sectors. During the wheat milling process, the outer protective layer of the wheat kernel, known as the bran, is separated from the endosperm. Wheat bran typically accounts for 14–14.5% of the total wheat kernel. If the bran is milled together with the endosperm instead of being separated, the resulting flour is known as whole wheat flour (atta). Depending on product requirements, millers can produce either fine bran or coarse bran, allowing manufacturers to optimize texture and nutritional value for different bakery applications.

Wheat bran is extensively used in the production of digestive biscuits, whole-wheat crackers, high-fiber cookies, health biscuits, breakfast cereals, cereal bars, and other wholesome baked products. Its exceptionally high dietary fiber content makes it the preferred ingredient for manufacturers looking to develop high-fiber and whole-grain products that appeal to health-conscious consumers. In several African countries, high-fiber biscuits made with wheat bran are commonly referred to as Military Biscuits or Army Biscuits because of their long shelf life, nutritional benefits, and suitability for institutional feeding programs.

Besides enhancing nutritional value, wheat bran also contributes significantly to product quality. It imparts a pleasant nutty and earthy flavor along with the rustic texture that consumers associate with wholesome grain products. In biscuit dough formulations, bran increases water absorption and moisture retention, affecting dough handling, biscuit spread, crispness, and overall eating quality. With the growing global demand for healthier bakery products, wheat bran continues to be an economical and sustainable ingredient that enables manufacturers to create nutritious, fiber-rich baked goods without compromising taste or texture.
