Chorleywood Process Which Revolutionised Bread Manufacturing
Bread Manufacturing was changed for ever with Chorleywood process , This process allowed bakers to produce bread loaves in shortest ever time with continuous process without the conventional method of allowing bread to ferment for long hours . Most of automated Bread Manufacturing plants across the globe follow Chorleywood process .
Even the fresh crusty bread baked at your local supermarket is probably made the Chorleywood way.
The work of the scientists at the Chorleywood Flour Milling and Bakery Research Association laboratories in 1961 led to a new way of producing bread, making the average loaf in Britain 40% softer, reducing its cost and more than doubling its life.
25th November 1965: A line of baked loaves ready to be packed at the Wonderloaf Bakery, Tottenham, north London. The move was good for British farmers growing low-protein wheat
What is more, each slice was uniform.
For its supporters, it was the innovation that pushed bread into the modern era.
"It is a process we invented and we should be very proud of it," says Gordon Polson, of the British Federation of Bakers. "UK bread is around the cheapest in the world."
The bread scientist, Stan Cauvain, who worked with the original inventors and has written the definitive work on the Chorleywood Process says they knew from the beginning they had changed baking forever.
"The inventors knew they were on to something special and it would have far reaching consequences."
Its origins lay in the late 1950s and the need to try to find a way for small bakers to compete with new industrial bakeries. The light brown "national loaf" during the long years of rationing had, for many consumers, outstayed its welcome. Soft, springy, white bread - that did not go stale quickly - was what the public wanted.
"Already, thanks to the Chorleywood process, nearly half the wheat in our bread is British. The industry's current development programme could bring about a situation where British bread is made from an even higher proportion of British wheat - thus making the British loaf even better value for money in relation to world bread prices."
The research bakers at Chorleywood discovered that by adding hard fats, extra yeast and a number of chemicals and then mixing at high speed you got a dough that was ready to bake in a fraction of the time it normally took.
It allowed bread to be made easily and economically with low protein British wheat.
Important Timelines for Modern Bread Manufacturing in UK
1928: First bread slicing machine, invented by Otto Rohwedder, exhibited at a bakery trade fair in the US
- 1930: Large UK bakeries take commercial slicers and sliced bread first appears in shops
- 1933: Around 80% of US bread is pre-sliced and wrapped. The phrase "the best thing since sliced bread" coined
- 1941: Calcium added to UK flour to prevent rickets
- 1942: The national loaf - much like today's brown loaf - introduced to combat shortage of white flour
- 1954: Conditions in bakeries regulated by the Night Baking Act
- 1956: National loaf abolished
- 1961: The Chorleywood Bread Process introduced

Chitrajan Dar CEO ITC Foods Speak s On Business Strategy
ITC foods a food arm of India,'s major corporate house ITC ltd , which has business spread out to tobacco , papers , hotels , lifestyle , packaged food and Agri commodities. ITC ltd major earnings come from tobacco business and are leader in this category . To make ITC less dependent on tobacco earnings it has diversified in to foods and personal care segment making it into league of HUL , PG , Kraft and Pepsi . Chitrajan Dar has taken over from Ravi Navare as CEO of it Food division ITC Foods.Sun feast brands of biscuit s have made a mark on biscuit segment giving tough competition to already entrenched players like Britannia and Parle . Taking advantage of huge network of existing dealers and distribution channels ITC could well become a major brand in biscuit segment
Speaks to ET
ITC Foods, the maker of Bingo! Chips, Sunfeast biscuits and Yippee! Noodles, has gained a reputation of being a disruptive player. Contributing 12-13% to its parent's revenue, the division turned the corner last fiscal. Its boss, chief executive Chitranjan Dar , though, is reluctant to take all the credit. He says he took over when brands were established and the division only needed consolidation.
The strength of ITC Foods lies in sourcing staples through its e-choupal system that offers direct contact with farmers and a distribution channel that piggybacks on the equity enjoyed by Wills cigarettes across corner outlets. Dar, who has had a three-decade-run at the cigarettes-to-hotels group, tells Sarah Jacob how the division is now focused on a high-margin, value-added products strategy and is working on developing healthier offerings.
Excerpts from an interview:
Where does Sunfeast stand in the biscuits segment?
Our market share is a third of what Britannia and Parle
Products have. (Industry estimates peg Sunfeast's market share at 11%).
We are looking at profitable growth by following a higher margin,
value-added strategy. We have been focusing on the mid-market and
premium segment and less on glucose biscuits. We launched Marie oats,
Special cookies, premium creams, choco fills and relaunched Marie and
Dark Fantasy.

Will Tikki Packs Save The Day For Biscuit Manufacturers?
Indian Biscuit Manufacturers are under tremendous pressure for profit margin against ever rising inflation which had made raw material costlier to them . The options are limited for the biscuit manufactures either they increase price for their product or increase the volumes of their sales . Increasing price is a difficult option thanks for the cut throat competition and Indian consumers change of loyalty over price . Now manufacturers are trying to place products on every price point as low as Rs1/- , Rs2/- , Rs3/- for these small packs they have coined a term called Tikki Packs ( small packs ) . So you find all major manufacturers marketing their products on Tikki Packs with 4- 5 biscuits per pack wts around 25 - 35gms for Rs2/-.
This Tikki Pack concept was first initiated by Cavin Kare for its "Chic" shampoo giving shampoo in sachets for Rs2/- , the idea was well accepted by consumers and it became mega hit overnight . Others too followed the idea and we had all fmcg giving their products in Tikki Packs . Britannia started the Tikki Pack concept in early 2000s for Tiger , then parle joined and offered its Parle G in Tikki Packs and now Sunfeast(ITC) has joined the competition with its Tikki Packs for its glucose biscuits. With economic slowdown and spiraling prices still looming large manufacturers are finding small packs as best strategy to increase their sales, as consumers would not mind spending such a low amount on biscuits .This also helps people under BPL to be able to buy branded biscuits for themselves.
Interesting use of Tikki packs of biscuits has been observed in this region . People use Tikki packs for
1 Giving it to poor people as alms" daan" during festive / religious ceremonies .
2. Pets
3. Return Gifts at Birth day s
4. Retail shop owners exchanging for change s.
5. Kiosk owners put it along with other sachets
Even new entrants have gone for Rs5/( $0.11)- a pack eg- Oreo , Mcvities .Competing for consumers every rupee in biscuit market .

Demand Rises For Bakeware & Ingredients Supplies In India
Guest post by Chitra Choudhary
Ms Chitra Choudhary one of our blogs regular reader shares her frustration on finding bakeware & Ingredient suppliers in Delhi
"We are some of the baking enthusiasts in Delhi who find it difficult to get the baking ingredients and pans for our baking. The sector is unorganized as far as home baking is concerned. We do not get easily fresh yeast, dried yeast and other ingredients which form a vital component of the baking process. I have gone searching personally in the shops and finally got my pans in Old Delhi. It is frustrating and time consuming to search for simple tools of baking here in India. This is not only my experience but also of the numerous home bakers who face the same lack of facilities everywhere in India.
I would like to know whether there are manufacturers in Delhi who can sell their baking ingredients like fresh yeast, dry instant yeast, cooking chocolate, cream cheese for cheesecakes, cake decorating ingredients and tools, baking pans etc. to home bakers like me. India has a very good market for such products and I am confident the suppliers as well as the consumers will be happy if our dream will be fulfilled.
Baking at home is enjoyed by many families and I hope many manufacturers come into this untapped business as soon as possible."
Bakeware business are not so much developed here in India as its in western countries but its promising business . Few stores have been in operations with imported items .More entrepreneurs and manufacturers are required to match the growing demand for bakewares and speciality ingredients for home baking requirements.

Is White Bread Losing Its Popularity ?
What more evidence one want to see that white bread has fallen from its once most sought out bread for even the street hawker for snacks ( tikkiwala) gives option for multi grain, brown or whole grain bread instead of white bread .
White bread which are mass produced are made of wheat flour devoid of bran and germ which are removed while passing through milling process.White bread flour thus doesn't have dietary fibre , iron ,Vitamin B and micro nutrients such as thiamine, riboflavin and niacin . However many countries have food laws making white flour fortification with these nutrients mandatory ( Fortification of bread is not present in Indian PFA act ) .Another important nutrient is folic acid .Removal of bran and germ gives wheat flour a longer shelf life thus making it popular among bread manufacturers .
Popularity of Whole grain or Brown Bread are for following reasons
Recent articles in leading mag/newspaper shows similar trend in other countries
British Bakers
Sale Volumes of Brown /seeded bread has increased by 6.1% from last year and for white bread decreased by 1.4% for the same period
Herald Sun
Health-conscious consumers are driving a trend toward wholegrain and nutrient-laden bread varieties, steadily eroding the popularity of white bread.Sales of breads enriched or fortified with nutrients are growing by 10 to 15 per cent a year, with more than $320 million in sales, a Bread Manufacturing in Australia report by IBISWorld found.
GreenFieldReporter.com
For the first time in 15 years, the U.S. Department of Agriculture is proposing new standards for school meals - ones that call for more whole grains and fresh fruits and vegetables, fat-free flavored milks, limited servings of potatoes and starchy vegetables, and reduced amounts of sodium and calories.

Whenever you replace white flour with whole grains—in bread, cereal, pasta—it’s a strike against aging. Soluble fiber, found in oats and barley, has been linked to lower levels of insulin and bad cholesterol (think: diabetes and heart disease), and insoluble fiber in whole wheat reduces risk of gastrointestinal maladies like diverticulosis. Check out bread made with the new albino whole wheat—it tastes like the real white thing.

Cadbury Oreo Introduces Low Price Packs
With launch of regular pack size of Rs 10/- and Rs 20/- in Indian brnaded biscuit market Cadbury Oreo is now available in low price tag of Rs 5/- for 29.4 g ( 3 cream sandwiched biscuits ) . Oreo has now joined local players such as Britannia , Parle and ITC competing for volumes over premium ( low price tags ). Consumers who prefers on the move snacks such as school going kids or youngster planning evening hangouts or the budget conscious consumers could be the target for such pricing .
Cadbury Oreo has launched its Rs5/- pack biscuits in a Pile pack arrangement instead of more popular format of On the Edge biscuit pack this arrangement gives a feeling of more biscuit in a pack .Packaging is done with metallised laminate.
Only difference we can figure it out between imported Oreo and now available local Oreo is the strength of shell which cracks up with little pressure while opening the pack . It could be due to flour or baking features done for local Oreo .

What Make s Indian Bakery Market So Hot For Major International Companies
We have been witnessing major international bakery companies making beeline to Indian bakery segment in recent times with latest news of Kraft joining the rank .
In one of the my earlier articles I have mentioned about failed attempts by mnc to establish themselves in bakery segment . But that was in past few factors have now turned Indian bakery segment as favorites for international biggies .
Here are few major reasons
Liberalised economy, gone are they days for licence raj .Present policies have been opened for foreign participation in bakeries earlier restricted for domestic players .
Economic slowdown across the developed nations . With China and India having impressive growth rate for decades .These markets gives avenues for growth to these companies. Bakery industry along with booming economy has been clocking 20% annual growth .
Disposable incomes with large middle class has made consumers to try out various bakery products which were out of the reach few years back.
Low competition with few big local players on national scene gives big opportunities to these multinationals to enter huge market worth Rs 12,000/ crore .
Availablity of Low cost technology and skilled manpower makes manufacturing attractive for these foreign companies
Availability of raw material ( flour ,sugar ) except for fat ( palm oil) which now being imported from Asean countries also makes Indian market more lucrative .
Here are major multinationals which have registered their presence in Indian bakery market in recent times
Kraft Food Inc
United Biscuits
Pepsico
GSKB ( Glaxo Smithkline )
Dunkin Donuts
Starbucks
Cinnabon
Unibic
Australian Foods ( Cookieman)
Lotte
Ceylon Biscuits Ltd
