Chorleywood Process Which Revolutionised Bread Manufacturing

Bread Manufacturing was  changed for ever  with  Chorleywood  process  , This process allowed bakers to produce bread loaves in  shortest  ever  time with continuous process without  the  conventional method of  allowing bread to ferment for long hours . Most of automated Bread Manufacturing plants  across the globe  follow Chorleywood process .

Even the fresh crusty bread baked at your local supermarket is probably made the Chorleywood way.

The work of the scientists at the Chorleywood Flour Milling and Bakery Research Association laboratories in 1961 led to a new way of producing bread, making the average loaf in Britain 40% softer, reducing its cost and more than doubling its life.

What is more, each slice was uniform.

For its supporters, it was the innovation that pushed bread into the modern era.

"It is a process we invented and we should be very proud of it," says Gordon Polson, of the British Federation of Bakers. "UK bread is around the cheapest in the world."

The bread scientist, Stan Cauvain, who worked with the original inventors and has written the definitive work on the Chorleywood Process says they knew from the beginning they had changed baking forever.

"The inventors knew they were on to something special and it would have far reaching consequences."

Its origins lay in the late 1950s and the need to try to find a way for small bakers to compete with new industrial bakeries. The light brown "national loaf" during the long years of rationing had, for many consumers, outstayed its welcome. Soft, springy, white bread - that did not go stale quickly - was what the public wanted.

"Already, thanks to the Chorleywood process, nearly half the wheat in our bread is British. The industry's current development programme could bring about a situation where British bread is made from an even higher proportion of British wheat - thus making the British loaf even better value for money in relation to world bread prices."

The research bakers at Chorleywood discovered that by adding hard fats, extra yeast and a number of chemicals and then mixing at high speed you got a dough that was ready to bake in a fraction of the time it normally took.

It allowed bread to be made easily and economically with low protein British wheat.

Parle Products Goes For Expansion Mode To Thwart Competition

 Parle  Products  the leading  biscuit manufacturer  in India  has adopted  a aggressive  expansion plan  to maintain its leadership position in biscuit segment through increasing its production  capacities and distribution channels .

The Rs6,000 crore biscuits major Parle Products, which has pilfered Britannia Industries Ltd’s market share, is looking to maintain its leadership in the branded biscuits segment.
Parle claims to hold a market share of 40% in volume and 32% in value terms in the branded biscuits segment. At present, Britannia has a market share of 28% in volume terms and 32% in value.

Analysts estimate Britannia has lost about 4% volume share in the last three years, whereas Parle has gained the same.
Going forward, the company plans to double its distribution network and increase the number of its manufacturing units.

ITC Foods, the maker of Bingo! Chips, Sunfeast biscuits and Yippee! Noodles, has gained a reputation of being a disruptive player. Contributing 12-13% to its parent's revenue, the division turned the corner last fiscal. Its boss, chief executive Chitranjan Dar , though, is reluctant to take all the credit. He says he took over when brands were established and the division only needed consolidation.

The strength of ITC Foods lies in sourcing staples through its e-choupal system that offers direct contact with farmers and a distribution channel that piggybacks on the equity enjoyed by Wills cigarettes across corner outlets. Dar, who has had a three-decade-run at the cigarettes-to-hotels group, tells Sarah Jacob how the division is now focused on a high-margin, value-added products strategy and is working on developing healthier offerings.

Where does Sunfeast stand in the biscuits segment?


Our market share is a third of what Britannia and Parle
Products have. (Industry estimates peg Sunfeast's market share at 11%).
We are looking at profitable growth by following a higher margin,
value-added strategy. We have been focusing on the mid-market and
premium segment and less on glucose biscuits. We launched Marie oats,
Special cookies, premium creams, choco fills and relaunched Marie and
Dark Fantasy.

China Bans Benzoyl Peroxide And Calcium Peroxide Alongwith Other Food Additives

Chinese government is trying  to control the damage done by various food safety  related incidents to its food processing industry through various rules and laws . In latest attempt  Chinese authorities have banned several  food additives.

A report
Chinese authorities have banned several types of food additives as part of new national regulations on food safety issued on Friday.

The new regulations also stipulated that all additives should be marked clearly on food product labels.

The Ministry of Health (MOH) on Friday issued four national food safety regulations concerning food additives, food product labels, honey products and the limit of mycotoxins in food. Mycotoxins are metabolites of fungi that can adversely affect animal and human health.

The use of benzoyl peroxide, calcium peroxide and methanal as food additives has been banned under the new regulations, as these additives are no longer necessary for the production of food, according to Chen Rui, an MOH food safety official.

Kraft Foods To Open New Chocolate & Biscuit Factory In Brazil


Kraft  has shifted its  focus  to emerging economies such as China , India and Brazil  to offset its  declining sales in European market . Recent takeover of Cadbury  has given Kraft foods  a significant market foot hold for  these countries .

A  report

Kraft Foods has opened a new $80 million manufacturing facility in Pernambuco, Brazil.

The 270,000-square-foot plant will initially produce chocolate and powdered beverages. A biscuit line will be added in 2012.

The facility will employ more than 600 employees and eventually grow to 800 when the new biscuit line opens in 2012.

"With the opening of our new plant in Pernambuco, we're providing jobs to local Brazilians, investing in our communities and meeting the needs of our consumers in this important, fast-growing region," said Marcos Grasso, President of Kraft Foods Brazil.

The new facility will boast prismatic skylights, solar lighting and water heating, a wastewater treatment plant, low-emission equipment and eco-paved parking lots. The new facility is also seeking to be recognised by Leadership in Energy and Environmental Design, an internationally recognised green building certification system.

A biscuit manufacturing company which is looking to establish a flagship brand will use traditional, modern, and even unique methods to advertise.
Fox's Biscuits, which has become famed for the use of its gangster panda Vinnie in its adverts, is set to spend around £3 million on a campaign to push Ambers as its flagship brand, Marketing Week reported.

A new series of TV adverts has been shot; social media marketing links have been established, and a rather unique approach has been taken to push the new biscuits.

As part of the campaign, which is the largest the company has ever launched, Vinnie the panda has bought a racehorse, which he has named Amber after the biscuit brand. The horse will run in real events throughout the racing season.

 bakeware "We are some of the baking enthusiasts in Delhi who find it difficult to get the baking ingredients and pans for our baking. The sector is unorganized as far as home baking is concerned. We do not get easily fresh yeast, dried yeast and other ingredients which form a vital component of the baking process. I have gone searching personally in the shops and finally got my pans in Old Delhi. It is frustrating and time consuming to search for simple tools of baking here in India. This is not only my experience but also of the numerous home bakers who face the same lack of facilities everywhere in India.

I would like to know whether there are manufacturers in Delhi who can sell their baking ingredients like fresh yeast, dry instant yeast, cooking chocolate, cream cheese for cheesecakes, cake decorating ingredients and tools, baking pans etc. to home bakers like me. India has a very good market for such products and I am confident the suppliers as well as the consumers will be happy if our dream will be fulfilled.

Baking at home is enjoyed by many families and I hope many manufacturers come into this untapped business as soon as possible."

Is White Bread Losing Its Popularity ?

What more evidence one want to see that  white bread has fallen from its once most sought out bread  for  even the street hawker  for  snacks ( tikkiwala)  gives option for multi grain, brown or whole grain bread instead of white bread .

White bread which are mass produced  are made of wheat flour  devoid of  bran  and germ  which are removed while passing through milling process.White  bread flour  thus doesn't  have dietary fibre , iron ,Vitamin B and micro nutrients such as thiamine,riboflavin and niacin . However many countries have  food laws making white flour fortification with these nutrients mandatory (  Fortification of  bread is not present in Indian PFA act ) .Another important nutrient is folic acid .Removal of bran and germ gives wheat flour a longer shelf life thus making it  popular among bread manufacturers .

Oreo has now joined local  players such as Britannia , Parle and ITC  competing  for volumes over premium  (   low price tags ). Consumers  who prefers on the move snacks  such as school going kids or youngster planning evening hangouts   or  the budget conscious  consumers could be the target for  such  pricing .

Cadbury Oreo has launched its Rs5/- pack  biscuits  in a   Pile pack   arrangement  instead of  more popular format of   On the  Edge  biscuit pack   this  arrangement  gives  a feeling of more biscuit in a pack .Packaging is done with metallised laminate.

Only  difference we  can figure it out between imported  Oreo  and  now  available local Oreo  is  the strength of  shell  which cracks up  with little pressure while opening the pack . It could  be due  to  flour  or baking  features  done  for  local  Oreo .

Kraft  food s has launched its major brand  OREO BISCUITS  in India  and in few days  of its announcement  products  can be seen in all major supermarkets in  Delhi  . Oreo has price tags of Rs 20/ - for 137 gms and Rs 10/- for  68.6gms. But it wont be a cake walk for  Cadbury  Oreo   biscuits  as  it has to face local competition from Britannia s  Treat O  and ITC's  Dark Fantasy .

Cadburys To Launch Oreo In India By April End

After much  of anticipation  from  Kraft to launch Oreo in India  finally  Cadbury now  under Krafts  food division here in India  would  launch  world  famous  Oreo biscuits . As were the  flurry of activities were enough for people in the market  to guess about the launch and recent being the law suit by Kraft against local giant Britannia .  As reported in news  Cadbury  would be launching Oreos by April  end  and would manufacture the biscuit here locally. Mrs Bector's Food Specialities  will  supply  locally made  Oreos  to Cadbury thus bringing down cost of  Oreos( HT) . Indian Biscuit  industry  would not  be the same if  Krafts goes   for  aggressive launch  and marketing . Competition  would  be from  local Big 3  Britannia, Parle and ITC   and new mnc's entrants like  United Biscuits , Pepsi  and  Unibic .Recent launch of  Treat -O  from Britannia and Dark Fantasy  from  ITC   can be seen  as competition in this  segment .Britannia would be impacted most as the leader in premium segment of biscuits with brands such as Pure magic and  Cream  Treats  . Oreo  has  already  taken  over  Chinese biscuit  market  being leader in this  category . Imported Oreos was already available in select  stores  across India ,at price tag  of  Rs 50/-  for 14 biscuits . It plans to take on low cost strategy  to compete with  local brands from Rs 5/- for 3 , Rs 7/- for 10  and Rs 20/-  for 14 biscuit  thus relying on volumes to make margins(TOI) .  Its  also a big news for biscuit   raw material, equipment , packaging  suppliers and advertisers .

Confectionery maker Cadbury India today announced its entry into the country's estimated Rs 12,000 crore biscuit market through the launch of 'Oreo' brand from the global portfolio of its parent Kraft Foods.

"The introduction (of Oreo) marks the entry into a new category in India, with the aim to make the world’s favourite biscuit, Oreo, one of India’s favourite biscuits," Cadbury India said in a statement.

Oreo is around 100 years old brand and currently generates a revenue of USD 1 billion globally. In India, the company will be launching the biscuit in dark chocolate flavour.
"Introducing Oreo marks the beginning of our journey in this growing category and we are readying ourselves to make Oreo a preferred choice with Indian consumers," Kraft Foods President South Asia and Indo-China and Cadbury India Managing Director Anand Kripalu said.

Parle -G still  rules  the world   .Parle -G with its taste and quality has  been popular for generations of Indian  .
Parle-G, the glucose biscuit brand from Parle Products , has consolidated its position as the world's largest selling biscuit brand, says a report by Nielsen.

The study, for last year, says Parle-G has topped brands like Kraft's Oreo, Wal-Mart's private labels and Mexico's Gamesa in voulme sales to lead the 11,295-crore Indian biscuits category.

The Nielsen study adds India is the world's leading market for biscuits, ahead of the US, Mexico, China, Argentina, France, Italy, Germany, Turkey and Spain.
